Welcome back to our village kitchen! ???? Today, we’re excited to share a traditional recipe for baking fresh bread, straight from our village. Join us as we create delicious bread loaves using time-honored methods and simple, wholesome ingredients.

Ingredients:
Starter:

50 g flour ????
30 g water ????
2 g fresh yeast ????
Dough:

250 g flour ????
125 g water ????
1/2 tablespoon olive oil ????
10 g fresh yeast ????
5 g salt ????
20 g olive oil for brushing the dough ????
Instructions:
Preparing the Starter:

In a bowl, mix 50 g of flour, 30 g of water, and 2 g of fresh yeast. Stir until you get a smooth mixture. ????
Leave the starter in a warm place until it doubles in size. This should take about 1-2 hours. ⏲️
Preparing the Dough:

In a separate bowl, activate 10 g of fresh yeast in 125 g of warm water. Let it sit for 5-10 minutes until bubbles appear. ????️
Sift 250 g of flour into a large mixing bowl. ????
Pour the activated yeast mixture into the flour. ????➡️????
Add the prepared starter to the dough. ????➡️????
Add 1/2 tablespoon of olive oil. ????
Knead the dough, gradually adding the remaining flour until you get a dense dough. ????
Add 5 g of salt and continue kneading until all ingredients are well combined and the dough is smooth. ????
Let the dough rest for 20 minutes, covered with a towel. ⏲️
Forming and Proofing:

After resting, divide the dough into two halves. ✂️
Roll each half into a rectangle. ????
Brush the dough with 20 g of olive oil. ????????️
Carefully roll the dough into a tight roll, starting from one edge. ????
Place the roll seam-side down on a baking sheet lined with parchment paper. ????
Make deep cuts on the roll, leaving a couple of centimeters from the edges. ????
Brush the roll with a small amount of oil and let it proof for about 1 hour until it expands. ⏲️
Baking:

Preheat the oven to 200°C (392°F). ????
Bake the rolls in the preheated oven for 30-35 minutes until golden brown. ????
Remove the rolls from the oven and let them cool slightly before serving. ❄️
